Sorbitan fatty acid esters ( also known as Spans ) are produced by esterification of sorbitol and fatty acid. There are many types of sorbitan esters with different kinds of fatty acids and various degrees of esterification. They are lipophilic non ionic surfactants with HLB value from 1.8 to 8.6. Sorbitan fatty acid esters are usually used as emulsifying agents in the preparation of emulsions, creams, and ointments for pharmaceutical and cosmetic use. When used alone they produce stable water-in-oil emulsions but they are frequently used with a polysorbate (also known as Tweens) in varying proportions to produce water-in-oil or oil-in-water emulsions or creams with a variety of different textures and consistencies. Sorbitan fatty acid esters are also used as emulsifiers and stabilisers in food.

Polysorbate (also known as Tweens) are reactant of sorbitan fatty acid esters and ethylene epoxide. They are hydrophilic non ionic surfactants with HLB value from 9.6 to 16.7. Polysorbate are usually used as emulsifiers in some pharmaceuticals and food preparation. They are often used in cosmetics to solubilize essential oils into water-based products. When used alone they produce stable oil-in-water emulsions but they are frequently used with a sorbitan fatty acid ester (also known as Spans) in varying proportions to produce water-in-oil or oil-in-water emulsions or creams with a variety of different textures and consistencies.
